Description

Rich chocolate cookies with a delightful texture, filled with creamy chocolate ganache.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate ganache (1/2 cup heavy cream + 8 oz chocolate)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  7. Use your thumb or the back of a spoon to create an indent in the center of each cookie.
  8. Bake for 10-12 minutes until set.
  9. Let cool, then fill the centers with chocolate ganache.

Notes

Make sure your butter is softened but not melted for the best texture. Don’t overcrowd the baking sheet; give the cookies enough space to spread a little while baking.
