Description
A sweet and healthy treat that combines creamy Greek yogurt, fresh strawberries, and rich chocolate for a delicious snack or dessert.
Ingredients
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- In a large bowl, add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix them together well.
- Scoop about 2 tablespoons of the yogurt mixture and place it on a parchment paper-lined baking sheet or large plate to form clusters. You should be able to make about 10 clusters.
- Put the baking sheet with the yogurt clusters in the freezer. Freeze until they are completely frozen and solid, which takes about 60 to 120 minutes.
- Once the clusters are frozen, melt the chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15 or 30-second intervals, stirring in between, until the chocolate is fully melted.
- Take the frozen yogurt clusters out of the freezer. Carefully dip each one into the melted chocolate, using a spoon to ensure each cluster is coated well.
- Place each chocolate-coated cluster back on the prepared baking sheet. Optionally add a sprinkle of sea salt.
- Return the clusters to the freezer for a few minutes to let the chocolate harden and the yogurt solidify a bit. Enjoy!
Notes
For a fun twist, try using different types of chocolate for dipping, such as dark or white chocolate. You can also add nuts or use different fruits for variation.
