Deliciously chewy brownie bites packed with chocolate and peanut butter flavor, perfect for a quick snack.
Ingredients
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup creamy peanut butter
- 1/4 cup chocolate chips (optional)
- Peanut butter for drizzling (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a microwave-safe bowl, melt the unsalted butter for about 30 seconds.
- Stir in the granulated sugar, eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the peanut butter and chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool for a few minutes before removing from the tin.
- Drizzle with extra peanut butter if desired and enjoy!
Notes
For a vegan option, substitute eggs with 1/4 cup of applesauce.
