Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 avocado, sliced
  • 4 whole wheat tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Sour cream or Greek yogurt (optional)
  • Lime wedges (for serving)


Instructions

  1. In a bowl, combine olive oil, chili powder, cumin, salt, and pepper.
  2. Toss the chicken breasts in the spice mixture until fully coated.
  3. Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes per side or until cooked through. Remove from heat and let it rest before slicing.
  4. In the same skillet, add black beans, corn, and bell peppers. Cook for about 3-4 minutes until the veggies are soft.
  5. Warm tortillas in a separate pan or microwave.
  6. Layer sliced chicken, veggie mixture, avocado slices, and cheese on each tortilla.
  7. Add a dollop of sour cream or Greek yogurt if desired.
  8. Roll up the tortilla tightly, slice in half, and serve with lime wedges.
