Ingredients
- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 avocado, sliced
- 4 whole wheat tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Sour cream or Greek yogurt (optional)
- Lime wedges (for serving)
Instructions
- In a bowl, combine olive oil, chili powder, cumin, salt, and pepper.
- Toss the chicken breasts in the spice mixture until fully coated.
- Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes per side or until cooked through. Remove from heat and let it rest before slicing.
- In the same skillet, add black beans, corn, and bell peppers. Cook for about 3-4 minutes until the veggies are soft.
- Warm tortillas in a separate pan or microwave.
- Layer sliced chicken, veggie mixture, avocado slices, and cheese on each tortilla.
- Add a dollop of sour cream or Greek yogurt if desired.
- Roll up the tortilla tightly, slice in half, and serve with lime wedges.
Notes
For extra flavor, marinate the chicken beforehand. Feel free to customize with additional veggies or spices.
