Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup sesame seeds
  • 1/4 cup gluten-free flour (e.g., rice flour or almond flour)
  • 1/4 teaspoon salt
  • Water (as needed for consistency)
  • Oil (for frying)


Instructions

  1. Peel and chop the sweet potatoes into chunks. Steam or boil until tender, then mash in a bowl.
  2. Add sesame seeds, gluten-free flour, and salt to the mashed sweet potatoes. Mix until combined. If thick, slowly add water until achieving pancake batter consistency.
  3. Heat a non-stick skillet over medium heat and add a little oil.
  4. Pour a small amount of batter into the skillet and shape into a pancake. Cook for about 3-4 minutes on each side until golden brown.
  5. Repeat the process with the remaining batter, adding more oil as needed.
  6. Serve warm and enjoy your sweet potato pancakes!

Notes
