Ingredients
- 2 medium sweet potatoes
- 1/2 cup sesame seeds
- 1/4 cup gluten-free flour (e.g., rice flour or almond flour)
- 1/4 teaspoon salt
- Water (as needed for consistency)
- Oil (for frying)
Instructions
- Peel and chop the sweet potatoes into chunks. Steam or boil until tender, then mash in a bowl.
- Add sesame seeds, gluten-free flour, and salt to the mashed sweet potatoes. Mix until combined. If thick, slowly add water until achieving pancake batter consistency.
- Heat a non-stick skillet over medium heat and add a little oil.
- Pour a small amount of batter into the skillet and shape into a pancake. Cook for about 3-4 minutes on each side until golden brown.
- Repeat the process with the remaining batter, adding more oil as needed.
- Serve warm and enjoy your sweet potato pancakes!
Notes
For extra crunch, lightly toast the sesame seeds before mixing. Adjust the water to achieve your desired pancake thickness.
