Ingredients
- 400 g chicken thighs (cut into small pieces)
- 2 cups scallion (chopped)
- 4 tablespoons oil
- 2 tablespoons soy sauce
- 1/2 tablespoon dark soy sauce
- 1/2 tablespoon oyster sauce
- 1/2 teaspoon black pepper powder
- 2 tablespoons corn starch
Instructions
- Heat 4 tablespoons of oil in a large skillet or wok over medium-high heat.
- Add chicken thighs and stir-fry until browned and cooked through, about 6-8 minutes. Remove and set aside.
- Add more oil if needed, stir-fry scallions for 1 minute until softened.
- Return chicken to the skillet, add soy sauces and oyster sauce.
- Sprinkle black pepper and stir well to coat chicken. Cook for another 2-3 minutes.
- Add corn starch mixed with a little water, stir until sauce is glossy.
- Transfer to a serving dish, garnish with additional scallions, and serve hot with rice or noodles.
