Ingredients

  • 400 g chicken thighs (cut into small pieces)
  • 2 cups scallion (chopped)
  • 4 tablespoons oil
  • 2 tablespoons soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1/2 tablespoon oyster sauce
  • 1/2 teaspoon black pepper powder
  • 2 tablespoons corn starch


Instructions

  1. Heat 4 tablespoons of oil in a large skillet or wok over medium-high heat.
  2. Add chicken thighs and stir-fry until browned and cooked through, about 6-8 minutes. Remove and set aside.
  3. Add more oil if needed, stir-fry scallions for 1 minute until softened.
  4. Return chicken to the skillet, add soy sauces and oyster sauce.
  5. Sprinkle black pepper and stir well to coat chicken. Cook for another 2-3 minutes.
  6. Add corn starch mixed with a little water, stir until sauce is glossy.
  7. Transfer to a serving dish, garnish with additional scallions, and serve hot with rice or noodles.
