Description
Delicious and easy grilled chicken thighs topped with tangy chimichurri sauce.
Ingredients
- 4 chicken thighs
- 1 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, mix together parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
- Reserve half of the sauce for serving, and use the other half to marinate the chicken thighs for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken thighs for about 6-7 minutes on each side or until fully cooked.
- Serve the grilled chicken topped with the reserved chimichurri sauce.
Notes
Marinate the chicken for at least 30 minutes for the best flavor. Can substitute chicken thighs with chicken breasts or shrimp.
