Description

A simple and soul-warming Chickpea and Spinach Curry perfect for busy days.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 1 tablespoon curry powder
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion, garlic, and ginger. Sauté until onion is translucent.
  3. Add curry powder and stir for 1 minute.
  4. Add chickpeas and coconut milk, stir well.
  5. Simmer for 10 minutes.
  6. Add spinach and cook until wilted.
  7. Season with salt and pepper.
  8. Serve warm with rice or bread.
