Description

A flavorful Chickpea Shawarma Bowl that’s easy to prepare and perfect for meal prep.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 2 teaspoons shawarma spice mix
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pita bread, for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss chickpeas with olive oil and shawarma spice mix, ensuring they are well coated.
  3. Spread chickpeas on a baking sheet and roast for 25 minutes, shaking the pan once or twice.
  4. While chickpeas roast, prepare quinoa according to package instructions and fluff when done.
  5. In a bowl, mix cherry tomatoes, cucumber, and red onion; toss gently.
  6. In a separate bowl, whisk tahini, lemon juice, and salt, adding water if it’s too thick.
  7. Once chickpeas are done, assemble the bowl with quinoa, roasted chickpeas, and veggie mix, layering them attractively.
  8. Drizzle tahini sauce over the top and serve with pita.

Notes

For extra sauciness, add more tahini, and for some heat, toss in chili flakes.
