Quick to make and delicious, these Chickpea Salad Lettuce Boats are the perfect healthy snack or meal option for warm days.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 head of lettuce (romaine or butter)


Instructions

  1. In a bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley. Stir to mix.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss to combine.
  4. Separate the lettuce leaves and spoon the chickpea mixture into each leaf.
  5. Serve immediately and enjoy.
