A refreshing salad filled with protein, fiber, and fresh vegetables, perfect for quick meals or as a side dish.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Gather and rinse chickpeas. Drain and rinse under cool running water to improve texture.
- Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and chop the parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Adjust to taste.
- In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, and parsley. Pour the dressing over and toss gently.
- Top with crumbled feta cheese just before serving.
Notes
Let the salad rest for 10 to 20 minutes for flavors to meld. Use good quality olive oil for the best flavor.
