Ingredients
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and parsley. Toss them around to mix well.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for 30 minutes to let flavors meld.
Notes
For variations, consider using black beans or kidney beans in place of chickpeas. Fresh herbs are recommended for the best flavor.
