- 1.5 lbs boneless chicken breasts or thighs
- 12 oz egg noodles
- 6 tablespoons unsalted butter
- 2–3 cloves garlic, minced
- Salt and pepper, to taste
- Optional: chopped parsley, grated Parmesan, red pepper flakes, thyme, or paprika
Instructions
- Season the Chicken: Pat the chicken dry and season with salt, pepper, and optional herbs like thyme or paprika.
- Cook the Chicken: Heat a skillet over medium-high heat with a little oil or butter. Sear chicken for 5–6 minutes per side until golden and cooked through (internal temp 165°F). Let rest, then slice.
- Boil the Noodles: Cook egg noodles in salted boiling water until al dente. Drain and toss immediately with a bit of butter to prevent sticking.
- Prepare the Butter Sauce: In a separate pan, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant. Add a splash of reserved pasta water for extra creaminess. Season with salt and pepper to taste.
- Combine Everything: Add noodles to the butter sauce and toss to coat evenly. Top with sliced chicken.
- Garnish & Serve: Sprinkle with chopped parsley, grated Parmesan, or red pepper flakes. Serve warm.
Notes
This dish can be made with rotisserie chicken for a faster prep. Try adding steamed broccoli or spinach for a more complete meal. Leftovers store well in the fridge for up to 3 days.
