Ingredients
- 2 cups cooked chicken, shredded
- 1 package cheese tortellini
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat some oil in a large pot over medium heat. Add chopped onion, diced carrots, and diced celery, sautéing until softened, about 5 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a boil.
- Stir in cheese tortellini and Italian seasoning. Cook according to package instructions, around 3-5 minutes.
- Add shredded chicken to the pot and heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, consider using a rotisserie chicken. Feel free to add fresh greens or experiment with different seasonings.
