Description
A comforting Chicken Tortellini Soup loaded with tender chicken, fresh vegetables, and cheesy tortellini, perfect for chilly evenings.
Ingredients
- 1 pound boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 8 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 package (about 9 ounces) cheese tortellini, fresh or frozen
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper, to taste
Instructions
- Cut chicken into bite-sized pieces; season with salt and pepper.
- In a large pot, heat olive oil over medium heat; sauté onion, carrots, and celery about 5 minutes until tender.
- Add garlic; cook 1 minute until fragrant.
- Pour in chicken broth; add chicken, bay leaves, and thyme. Bring to a boil; reduce heat and simmer for 20 minutes.
- Stir in tortellini; cook according to package directions (about 5–7 minutes) until tender.
- Remove bay leaves; season to taste with salt and pepper. Stir in parsley.
- Serve hot, with extra parsley if desired.
Notes
Can be customized with your favorite vegetables or spices. For spicier soup, add crushed red pepper flakes.
