Ingredients
- 2 cups shredded cooked chicken
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/2 cup salsa
- 12 small corn tortillas
- Vegetable oil for frying
Instructions
- In a bowl, combine the shredded chicken, cheese, diced onion, and salsa. Stir until well mixed.
- Warm tortillas in a skillet over low heat until pliable.
- Place a spoonful of the mixture on each tortilla.
- Tightly roll the tortillas around the chicken mixture.
- Heat vegetable oil in a frying pan over medium heat.
- Fry the taquitos until golden brown and crispy, about 2-4 minutes per side.
- Let the taquitos drain on paper towels and serve hot.
