Ingredients
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar and Monterey Jack recommended)
- 1/2 cup salsa
- 10 small corn tortillas
- Olive oil for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine shredded chicken, cheese, and salsa. Mix well.
- Warm tortillas in a skillet over medium heat until pliable.
- Place a spoonful of the filling in each tortilla and roll up tightly.
- Arrange taquitos seam-side down on a baking sheet and brush with oil.
- Bake for 15-20 minutes until golden brown and crispy.
- Let cool for a few minutes before serving.
Notes
Store leftover taquitos in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months.
