Description

A quick and comforting Chicken Pot Pie Skillet that combines tender chicken, veggies, a creamy sauce, and flaky crust—all made in one skillet.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 package refrigerated pie crusts


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a skillet, combine the shredded chicken, frozen mixed veggies, cream of chicken soup, chicken broth, onion powder, garlic powder, and thyme. Mix it up!
  3. Cook over medium heat until everything is heated through.
  4. Roll out your pie crust and gently place it over the chicken mixture in the skillet.
  5. Cut slits in the crust to let steam escape.
  6. Bake for 20-25 minutes until the crust is golden brown.

Notes

Feel free to substitute chicken with turkey or ham, and mix in whatever veggies you have on hand.
