Description
A warm and hearty sandwich layered with juicy chicken breasts, ripe tomatoes, fresh mozzarella, and basil pesto, all toasted to perfection on rustic ciabatta or sourdough bread. A perfect blend of Italian flavors in every bite.
Ingredients
- 4 thinly sliced chicken breasts
- 3–4 ripe Roma or heirloom tomatoes, sliced
- 8 oz fresh mozzarella, sliced
- ½ cup basil pesto (homemade or store-bought)
- 8 slices of ciabatta or sourdough bread
- Olive oil, salt, pepper, garlic (for seasoning)
Instructions
- Cook the Chicken: Season chicken breasts with salt, pepper, and garlic. Heat a skillet over medium heat and add olive oil. Cook each side for about 5–6 minutes, until internal temperature reaches 165°F. Set aside.
- Assemble the Sandwich: Spread 1–2 tablespoons of basil pesto on each slice of bread. Layer with sliced tomatoes, cooked chicken, and mozzarella.
- Toast It: Preheat the oven to 350°F. Place sandwiches on a baking sheet. Toast for 7–10 minutes, or until the mozzarella melts and the bread is crispy.
- Serve: Remove from oven. Garnish with fresh basil or a drizzle of balsamic glaze if desired. Serve immediately and enjoy!
Notes
These sandwiches can also be grilled in a panini press. Add arugula or spinach for an extra layer of greens. Best served warm, but components can be prepped in advance.
