Description

Ingredients

  • 4 thinly sliced chicken breasts
  • 34 ripe Roma or heirloom tomatoes, sliced
  • 8 oz fresh mozzarella, sliced
  • ½ cup basil pesto (homemade or store-bought)
  • 8 slices of ciabatta or sourdough bread
  • Olive oil, salt, pepper, garlic (for seasoning)


Instructions

  1. Cook the Chicken: Season chicken breasts with salt, pepper, and garlic. Heat a skillet over medium heat and add olive oil. Cook each side for about 5–6 minutes, until internal temperature reaches 165°F. Set aside.
  2. Assemble the Sandwich: Spread 1–2 tablespoons of basil pesto on each slice of bread. Layer with sliced tomatoes, cooked chicken, and mozzarella.
  3. Toast It: Preheat the oven to 350°F. Place sandwiches on a baking sheet. Toast for 7–10 minutes, or until the mozzarella melts and the bread is crispy.
  4. Serve: Remove from oven. Garnish with fresh basil or a drizzle of balsamic glaze if desired. Serve immediately and enjoy!

Notes

These sandwiches can also be grilled in a panini press. Add arugula or spinach for an extra layer of greens. Best served warm, but components can be prepped in advance.
