Description

Quick and delicious Chicken Pad Thai, customizable with chicken, shrimp, or tofu, and packed with flavor.


Ingredients

  • 8 ounces rice noodles
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 pound chicken breast, sliced (or tofu)
  • 1 cup bean sprouts
  • 1 cup bell peppers, sliced
  • 2 eggs, beaten
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup green onions, chopped
  • Chopped peanuts for garnish
  • Lime wedges for serving


Instructions

  1. Cook rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Add minced garlic and chicken slices; stir-fry until chicken is cooked through.
  4. Push chicken to one side of the skillet and pour beaten eggs on the other side; scramble until cooked.
  5. Stir in the cooked noodles, bean sprouts, and bell peppers.
  6. In a small bowl, mix peanut butter, soy sauce, and lime juice, then add to the noodles, stirring well to combine.
  7. Cook for an additional 2-3 minutes until everything is heated through.
  8. Serve topped with chopped green onions, peanuts, and lime wedges.

Notes

Customize with shrimp or tofu. Ensure to add lime juice for flavor.
