Quick and delicious Chicken Pad Thai, customizable with chicken, shrimp, or tofu, and packed with flavor.
Ingredients
- 8 ounces rice noodles
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 pound chicken breast, sliced (or tofu)
- 1 cup bean sprouts
- 1 cup bell peppers, sliced
- 2 eggs, beaten
- 3 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1/4 cup green onions, chopped
- Chopped peanuts for garnish
- Lime wedges for serving
Instructions
- Cook rice noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add minced garlic and chicken slices; stir-fry until chicken is cooked through.
- Push chicken to one side of the skillet and pour beaten eggs on the other side; scramble until cooked.
- Stir in the cooked noodles, bean sprouts, and bell peppers.
- In a small bowl, mix peanut butter, soy sauce, and lime juice, then add to the noodles, stirring well to combine.
- Cook for an additional 2-3 minutes until everything is heated through.
- Serve topped with chopped green onions, peanuts, and lime wedges.
Notes
Customize with shrimp or tofu. Ensure to add lime juice for flavor.
