Description

A comforting and wholesome chicken noodle soup, perfect for chilly days and family gatherings.


Ingredients

  • 1 lb chicken breast (diced)
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups egg noodles
  • 1 cup carrots (sliced)
  • 1 cup celery (sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat a little oil over medium heat and sauté the onion and garlic until softened.
  2. Add in the diced chicken and cook until browned.
  3. Pour in the chicken broth and water, bringing the mixture to a boil.
  4. Stir in the carrots, celery, thyme, and parsley.
  5. Reduce heat and simmer for about 15 minutes.
  6. Add the egg noodles and simmer until cooked through, about 5 to 7 minutes.
  7. Season with salt and pepper before serving.

Notes

For a richer flavor, use homemade chicken stock instead of store-bought. Adjust seasoning to taste.
