Description
A comforting and wholesome chicken noodle soup, perfect for chilly days and family gatherings.
Ingredients
- 1 lb chicken breast (diced)
- 4 cups chicken broth
- 2 cups water
- 2 cups egg noodles
- 1 cup carrots (sliced)
- 1 cup celery (sliced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat and sauté the onion and garlic until softened.
- Add in the diced chicken and cook until browned.
- Pour in the chicken broth and water, bringing the mixture to a boil.
- Stir in the carrots, celery, thyme, and parsley.
- Reduce heat and simmer for about 15 minutes.
- Add the egg noodles and simmer until cooked through, about 5 to 7 minutes.
- Season with salt and pepper before serving.
Notes
For a richer flavor, use homemade chicken stock instead of store-bought. Adjust seasoning to taste.
