A comforting and savory dish featuring tender chicken thighs in garlic gravy served with creamy mashed potatoes.
Ingredients
- 4 pieces chicken thighs
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup sour cream
Instructions
- Heat olive oil and butter in a skillet over medium heat.
- Add the chicken thighs and cook until browned on both sides, about 5-6 minutes.
- Remove chicken and set aside.
- Add minced garlic to the skillet and sauté until fragrant, about 30 seconds to 1 minute.
- Pour in chicken broth, bring to a simmer, scraping the bottom of the skillet.
- Stir in thyme, salt, and pepper, then return the chicken to the skillet and cover. Simmer until cooked through, about 15-20 minutes.
- Meanwhile, boil water for potatoes. Add cubed potatoes and cook until tender, about 15 minutes.
- Drain and mash potatoes, adding milk and sour cream until smooth. Season with salt and pepper.
- Serve chicken topped with garlic gravy over mashed potatoes.
