Description

A comforting and savory dish featuring tender chicken thighs in garlic gravy served with creamy mashed potatoes.


Ingredients

  • 4 pieces chicken thighs
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup sour cream


Instructions

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Add the chicken thighs and cook until browned on both sides, about 5-6 minutes.
  3. Remove chicken and set aside.
  4. Add minced garlic to the skillet and sauté until fragrant, about 30 seconds to 1 minute.
  5. Pour in chicken broth, bring to a simmer, scraping the bottom of the skillet.
  6. Stir in thyme, salt, and pepper, then return the chicken to the skillet and cover. Simmer until cooked through, about 15-20 minutes.
  7. Meanwhile, boil water for potatoes. Add cubed potatoes and cook until tender, about 15 minutes.
  8. Drain and mash potatoes, adding milk and sour cream until smooth. Season with salt and pepper.
  9. Serve chicken topped with garlic gravy over mashed potatoes.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 2 months.
