Ingredients

  • 2 cups cooked rice (day-old rice is perfect)
  • 1 cup diced chicken breast
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • Salt to taste


Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add diced chicken and cook until browned.
  3. Push chicken to one side and crack eggs, scrambling them.
  4. Add mixed vegetables and cooked rice to the pan.
  5. Pour soy sauce over the rice and mix well.
  6. Add green onions and salt, stir to combine.
  7. Cook for an additional 2-3 minutes, serve hot.

Notes

For best results, use day-old rice. Feel free to mix and match vegetables or proteins according to your preference.
