Ingredients
- ½ cup all-purpose flour
- 1 teaspoon salt (or to taste)
- ½ teaspoon pepper (freshly ground, or to taste)
- 3 large eggs
- ¼ cup vegetable oil
- 4 chicken breasts (boneless and skinless, cut in half lengthwise)
- 1 large lemon (sliced into thin rounds, seeds removed)
- 1 cup chicken broth (low sodium)
- ½ cup white wine (dry)
- 1 tablespoon lemon juice (freshly squeezed)
- 1 tablespoon all-purpose flour
- 2 tablespoons butter (unsalted)
- 2 tablespoons parsley (chopped, for garnish)
Instructions
- In a shallow dish, mix the flour, salt, and pepper together.
- In another dish, beat the eggs until mixed well.
- Dip each piece of chicken in the flour mixture, then in the egg mixture. Make sure to coat well.
- Heat the vegetable oil in a large skillet over medium heat. Fry the chicken until golden brown on both sides and cooked through. Remove and set aside.
- In the same skillet, sauté the lemon slices for a couple of minutes until they start to soften.
- Add the chicken broth, white wine, and lemon juice to the skillet. Stir well.
- Whisk in 1 tablespoon of flour and the butter until the sauce thickens.
- Add the chicken back into the sauce and let it simmer briefly.
- Serve the Chicken French hot, garnished with parsley.
Notes
Make sure the oil is hot enough before adding the chicken for a crispy texture. Fresh lemon juice is recommended over bottled for the best flavor.
