Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Season the chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and sear the chicken until golden brown and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Add chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese.
- Add the fresh spinach and let it wilt in the sauce.
- Return the chicken to the skillet, coating it with the creamy spinach sauce.
- Serve hot over pasta, rice, or with crusty bread.
