Ingredients
- 1 lb chicken breast, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- 1 tablespoon olive oil
- 1 cup brown rice or cauliflower rice
- 1 cup black beans, rinsed and drained
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a bowl, toss sliced chicken with fajita seasoning and olive oil.
- Heat a skillet over medium heat and cook the chicken until browned and cooked through, about 5-7 minutes.
- Add bell peppers and onion to the skillet and cook until softened, about 3-4 minutes.
- In meal prep containers, divide cooked brown rice or cauliflower rice.
- Top with sautéed chicken and vegetables, black beans, and sliced avocado.
- Garnish with fresh cilantro and lime wedges.
- Store in the fridge and reheat when ready to eat.
Notes
For creaminess, add sour cream or Greek yogurt. These bowls can be frozen; just add avocado and cilantro when ready to eat.
