Ingredients

  • 1 lb chicken breast, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons fajita seasoning
  • 1 tablespoon olive oil
  • 1 cup brown rice or cauliflower rice
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. In a bowl, toss sliced chicken with fajita seasoning and olive oil.
  2. Heat a skillet over medium heat and cook the chicken until browned and cooked through, about 5-7 minutes.
  3. Add bell peppers and onion to the skillet and cook until softened, about 3-4 minutes.
  4. In meal prep containers, divide cooked brown rice or cauliflower rice.
  5. Top with sautéed chicken and vegetables, black beans, and sliced avocado.
  6. Garnish with fresh cilantro and lime wedges.
  7. Store in the fridge and reheat when ready to eat.

Notes
