Description
A delightful twist on the classic Caesar salad, this sandwich features tender, crispy chicken with fresh lettuce and creamy dressing in a crispy baguette.
Ingredients
- ½ cup full-fat mayonnaise
- 3 tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp lemon juice
- ¼ cup Parmesan cheese (freshly grated)
- 1-2 garlic cloves (minced)
- ¼ tsp black pepper
- Pinch sea salt
- 5 chicken cutlets
- Sea salt (to taste)
- Ground black pepper (to taste)
- Oil (for frying)
- ⅓ cup all-purpose flour
- ½ tsp salt
- ¾ tsp smoked paprika
- 2 eggs
- ¼ tsp salt
- ¾ cup panko crumbs
- ¼ cup breadcrumbs
- 1 tsp dried parsley
- ½ tsp ground black pepper
- ½ tsp sea salt
- ½ tsp dried oregano
- 1 tsp garlic powder
- ¼ cup Parmesan cheese (freshly grated)
- 2 romaine hearts (chopped)
- 1-2 French baguettes
- Parmesan cheese (freshly grated)
Instructions
- Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan, minced garlic, black pepper, and a pinch of sea salt in a bowl.
- Take 4-5 tablespoons of the dressing and mix with the chopped romaine lettuce in a medium bowl. Cover and refrigerate both the salad and the remaining dressing separately.
- Lay the chicken cutlets on a cutting board and pound to even thickness; season with salt and ground black pepper.
- Prepare a breading station with three plates: flour mixed with salt and smoked paprika, whisked eggs with salt, and a mixture of panko, breadcrumbs, dried parsley, black pepper, salt, dried oregano, garlic powder, and grated Parmesan.
- Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mix, dip in the egg mixture, and press into the breadcrumb mix.
- Fry the chicken cutlets in the hot oil until golden brown and fully cooked on both sides (about 4-5 minutes per side). Drain on a wire rack.
- Slice the baguettes into 12 cm (5″) portions, open each lengthwise, spread with reserved Caesar dressing, and fill with a chicken cutlet and Caesar salad. Sprinkle extra Parmesan on top and close the sandwich.
- Serve immediately with fries.
Notes
For extra flavor, marinate the chicken cutlets for at least 30 minutes before breading. You can also substitute grilled chicken for a healthier option or add bacon for a smoky flavor.
