A delightful twist on the classic Caesar salad, this sandwich features tender, crispy chicken with fresh lettuce and creamy dressing in a crispy baguette.

Ingredients

  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 1-2 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • 5 chicken cutlets
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • Oil (for frying)
  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 romaine hearts (chopped)
  • 1-2 French baguettes
  • Parmesan cheese (freshly grated)

Instructions

  1. Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan, minced garlic, black pepper, and a pinch of sea salt in a bowl.
  2. Take 4-5 tablespoons of the dressing and mix with the chopped romaine lettuce in a medium bowl. Cover and refrigerate both the salad and the remaining dressing separately.
  3. Lay the chicken cutlets on a cutting board and pound to even thickness; season with salt and ground black pepper.
  4. Prepare a breading station with three plates: flour mixed with salt and smoked paprika, whisked eggs with salt, and a mixture of panko, breadcrumbs, dried parsley, black pepper, salt, dried oregano, garlic powder, and grated Parmesan.
  5. Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mix, dip in the egg mixture, and press into the breadcrumb mix.
  6. Fry the chicken cutlets in the hot oil until golden brown and fully cooked on both sides (about 4-5 minutes per side). Drain on a wire rack.
  7. Slice the baguettes into 12 cm (5″) portions, open each lengthwise, spread with reserved Caesar dressing, and fill with a chicken cutlet and Caesar salad. Sprinkle extra Parmesan on top and close the sandwich.
  8. Serve immediately with fries.

Notes

For extra flavor, marinate the chicken cutlets for at least 30 minutes before breading. You can also substitute grilled chicken for a healthier option or add bacon for a smoky flavor.
