Description

A delicious and satisfying sandwich combining tender chicken and creamy avocado, perfect for lunch or a light dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado
  • 4 slices sourdough or whole grain bread
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard (optional)
  • Butter or olive oil for toasting
  • Optional add-ins: tomato slices, red onion, crispy bacon, fresh spinach or arugula


Instructions

  1. In a bowl, mix shredded chicken with mayonnaise (or Greek yogurt), Dijon mustard (if using), and a pinch of salt and pepper.
  2. Mash the avocado with a little lime or lemon juice and a pinch of salt.
  3. Spread avocado on one side of two bread slices. Top with chicken mixture, layer on cheese and any optional add-ins. Close with remaining bread slices.
  4. Heat a skillet or grill pan over medium heat with butter or oil. Cook sandwiches for 3–4 minutes per side until golden and cheese is melted.
  5. Serve warm, sliced if desired.

Notes

For a vegetarian option, replace chicken with black beans or chickpeas. Use leftover roasted or grilled chicken for more flavor.
