Description
A delicious and satisfying sandwich combining tender chicken and creamy avocado, perfect for lunch or a light dinner.
Ingredients
- 2 cups cooked chicken, shredded
- 1 ripe avocado
- 4 slices sourdough or whole grain bread
- 1 cup shredded mozzarella or cheddar cheese
- 2 tablespoons mayonnaise or Greek yogurt
- 1 tablespoon Dijon mustard (optional)
- Butter or olive oil for toasting
- Optional add-ins: tomato slices, red onion, crispy bacon, fresh spinach or arugula
Instructions
- In a bowl, mix shredded chicken with mayonnaise (or Greek yogurt), Dijon mustard (if using), and a pinch of salt and pepper.
- Mash the avocado with a little lime or lemon juice and a pinch of salt.
- Spread avocado on one side of two bread slices. Top with chicken mixture, layer on cheese and any optional add-ins. Close with remaining bread slices.
- Heat a skillet or grill pan over medium heat with butter or oil. Cook sandwiches for 3–4 minutes per side until golden and cheese is melted.
- Serve warm, sliced if desired.
Notes
For a vegetarian option, replace chicken with black beans or chickpeas. Use leftover roasted or grilled chicken for more flavor.
