Description

A creamy, cheesy one-pot chili that’s easy to make and incredibly delicious, perfect for a quick dinner.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 2 cups shredded cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Sauté onion and garlic in a large pot until soft and aromatic.
  2. Add chicken, white beans, corn, green chilies, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  3. Reduce heat and let it simmer for about 20 minutes.
  4. Stir in cream cheese until melted and well combined.
  5. Add shredded cheese and stir until melted.
  6. Serve warm in bowls and enjoy!

Notes

This chili can be made ahead of time and actually tastes even better the next day.
