  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef or chicken broth
  • 8 oz pasta (rotini or penne)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Fresh cilantro or sliced green onions for garnish


Instructions

  1. In a large pot over medium heat, cook the ground beef or turkey until browned, stirring occasionally. Drain excess fat.
  2. Add taco seasoning, diced tomatoes, and broth to the pot. Stir to combine and bring to a boil.
  3. Add pasta, reduce heat to a gentle simmer, cover, and cook for 10-12 minutes until pasta is al dente.
