Description
A hearty baked casserole made with smoked sausage, tender potatoes, cheddar cheese, and ranch seasoning, baked until golden and creamy.
Ingredients
- 1 lb smoked sausage, sliced (kielbasa, turkey, or andouille)
- 2 lbs potatoes, diced (Yukon Gold or Russet)
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 1/2 cup milk
- 1/4 cup melted butter
- 1 small onion, diced
- 2 garlic cloves, minced
- Salt and pepper, to taste
- Chopped green onions (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, brown the sliced sausage until caramelized. Set aside.
- In the same pan, sauté the diced onion and minced garlic until soft and translucent.
- In a large mixing bowl, combine: diced potatoes, cooked sausage, sautéed onions and garlic, shredded cheese, ranch dressing mix, milk, melted butter, salt, and pepper. Mix well.
- Transfer mixture to a greased baking dish and spread evenly.
- Cover with foil and bake for 60 minutes.
- Remove foil and bake uncovered for another 15 minutes, or until potatoes are tender and top is golden.
- Garnish with chopped green onions before serving.
Notes
Try with pepper jack cheese for extra spice, or add bell peppers for more veggies. Can be prepped ahead and baked later.
