Description

A hearty baked casserole made with smoked sausage, tender potatoes, cheddar cheese, and ranch seasoning, baked until golden and creamy.


Ingredients

  • 1 lb smoked sausage, sliced (kielbasa, turkey, or andouille)
  • 2 lbs potatoes, diced (Yukon Gold or Russet)
  • 1 cup shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • Chopped green onions (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the sliced sausage until caramelized. Set aside.
  3. In the same pan, sauté the diced onion and minced garlic until soft and translucent.
  4. In a large mixing bowl, combine: diced potatoes, cooked sausage, sautéed onions and garlic, shredded cheese, ranch dressing mix, milk, melted butter, salt, and pepper. Mix well.
  5. Transfer mixture to a greased baking dish and spread evenly.
  6. Cover with foil and bake for 60 minutes.
  7. Remove foil and bake uncovered for another 15 minutes, or until potatoes are tender and top is golden.
  8. Garnish with chopped green onions before serving.

Notes

Try with pepper jack cheese for extra spice, or add bell peppers for more veggies. Can be prepped ahead and baked later.
