Ingredients

  • 1 lb Ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups uncooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 350°F.
  2. In a medium saucepan over medium heat, cook the ground beef with diced onion and minced garlic until the beef is browned, and onions are translucent, about 5-7 minutes. Drain excess fat.
  3. Stir in the tomato sauce, undrained diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
  4. Cook the elbow macaroni until just al dente, according to package instructions. Drain and return to pot.
  5. Combine tomato beef mixture with macaroni, and stir in half of the cheddar cheese, half of the mozzarella cheese, and sour cream.
  6. Transfer the mixture to a large baking dish, spreading evenly. Sprinkle the rest of the cheddar, mozzarella, and all of the Parmesan cheese on top.
  7. Bake in the preheated oven for 20 minutes, or until cheeses are melted and casserole is heated through.
  8. Let the casserole sit for a few minutes before serving.
