Ingredients
- 2 cups vegetable broth
- 1 cup white rice
- 2 cups chopped broccoli
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- In a pot, bring about 2 cups of vegetable broth to a boil.
- Add 1 cup of white rice, reduce heat to low, cover, and let simmer for about 15 minutes.
- While the rice cooks, steam 2 cups of chopped broccoli until tender, about 5-7 minutes.
- Once the rice is ready, stir in the steamed broccoli, then add in 1 cup of shredded cheddar cheese, 1/2 cup of milk, and 1 tablespoon of butter.
- Cook on low heat, stirring until the cheese melts and coats the rice and broccoli.
Notes
Use freshly shredded cheese for creamier consistency. Add garlic powder for richer flavor, and mix in proteins for a complete meal.
