Gather around the table with this comforting Easy Chimichanga Recipe. These crispy, cheesy Beef Chimichangas offer a Texmex delight perfect for any weeknight dinner.

Ingredients

  • 1 lb ground beef (80/20 for flavor)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 large flour tortillas (burrito-sized)
  • Vegetable oil (for deep frying)

Toppings for Serving:

  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Guacamole
  • Salsa or Pico de Gallo

Instructions

  1. Heat a frying pan over medium heat. Add the ground beef, onion, and garlic, cooking until the beef is browned and the onion is softened. Drain any excess fat.
  2. Stir in the ground cumin, chili powder, smoked paprika, salt, and black pepper. Add the tomato sauce and let it simmer for 5 minutes.
  3. Remove from heat and mix in the shredded cheddar cheese and Monterey Jack cheese until melted.
  4. Lay each tortilla flat and place a generous portion of the beef mixture in the center. Fold in the sides and roll up tightly.
  5. Heat vegetable oil in a pan over medium-high heat. Fry each chimichanga until golden brown and crispy, about 3 minutes per side. Transfer to a paper-lined plate.
  6. Serve warm, topped with shredded lettuce, diced tomatoes, sour cream, guacamole, and salsa or Pico de Gallo.

Notes

  • Make sure the oil is hot enough before frying to ensure a crispy texture.
  • Don’t overfill the tortillas to prevent them from bursting during frying.
  • Consider baking the chimichangas instead of frying for a healthier option.
  • Experiment with different cheeses for various flavor profiles.
