Cheese Croquettes

Description

Crispy on the outside and gooey on the inside, these cheese croquettes are a delightful snack or appetizer made from simple ingredients.


Ingredients

  • 2 lb Russet potatoes (about 4 potatoes)
  • 4 cloves garlic (smashed)
  • 2 tablespoons salt
  • 1/4 cup cream cheese
  • 2 tablespoons butter
  • ¼ tsp black pepper
  • 2 large eggs
  • 3 tablespoons all-purpose flour
  • 1 tsp salt
  • 2 cups breadcrumbs
  • Mozzarella (cut into 1-inch cubes)


Instructions

  1. Peel and chop the potatoes into 1-inch cubes. Put them in a large pot with the smashed garlic and salt.
  2. Cover the potatoes with cold water and bring everything to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  3. Drain the water and take out the garlic. Add the cream cheese, butter, and black pepper to the potatoes. Mash everything together until mixed well, but keep it chunky.
  4. In a shallow dish, whisk together the eggs, flour, and a little salt until smooth.
  5. In another shallow dish, put the breadcrumbs.
  6. Take a ball of mashed potato (about 1/2 a cup) and press a piece of cheese into the middle. Dip it into the egg wash, then coat with breadcrumbs. Repeat until all the potatoes are used.
  7. Heat about 1 inch of oil to 350°F. Cook the croquettes for 2-3 minutes on each side until golden brown.
  8. Serve with gravy or ketchup for dipping.

Notes

For extra crispiness, double dip in the egg wash and breadcrumbs. You can also add herbs or spices for additional flavor.
