Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine cornmeal, flour, baking powder, and salt.
- In a separate bowl, whisk together the milk, vegetable oil, and egg.
- Pour the wet mixture into the dry ingredients and mix until just combined.
- Fold in the cheddar cheese and jalapeños.
- Grease a muffin tin and pour the batter into each cup, filling them 3/4 full.
- Bake for 15 to 20 minutes until golden brown and a toothpick comes out clean.
- Let cool slightly before transferring to a wire rack.
Notes
Try mixing cheddar with pepper jack for extra flavor. For milder muffins, remove jalapeño seeds.
