Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine cornmeal, flour, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, vegetable oil, and egg.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Fold in the cheddar cheese and jalapeños.
  6. Grease a muffin tin and pour the batter into each cup, filling them 3/4 full.
  7. Bake for 15 to 20 minutes until golden brown and a toothpick comes out clean.
  8. Let cool slightly before transferring to a wire rack.

Notes

Try mixing cheddar with pepper jack for extra flavor. For milder muffins, remove jalapeño seeds.
