- 1 large yellow onion, finely chopped
- 5–6 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups low-sodium chicken or vegetable broth
- 2 cups whole milk
- 1/2 cup heavy cream (optional)
- 2 cups sharp cheddar cheese, freshly shredded
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 tsp fresh thyme leaves
- 1 tsp salt
- 1/2 tsp black pepper
- Pinch of cayenne pepper or smoked paprika (optional)
- Optional Garnish: cooked crumbled bacon, extra shredded cheddar cheese, sour cream, more fresh chives or parsley, croutons
Instructions
- Melt butter in a large pot over medium heat. If using olive oil, add it with the butter.
- Add chopped onion and sauté until translucent. Stir in minced garlic.
- Sprinkle flour over the cooked aromatics, stirring to form a roux.
- Gradually pour in broth while whisking to avoid lumps.
- Add cubed potatoes, bring to a gentle boil, then reduce heat. Simmer, covered, until potatoes are tender.
