Description
A comforting and creamy cauliflower turmeric soup that’s easy to make and perfect for cozy evenings.
Ingredients
- 1 head of cauliflower, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon turmeric powder
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and sauté until translucent.
- Toss in garlic and ginger, cooking for an additional minute.
- Stir in turmeric powder and cauliflower, cooking for about 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and let it simmer for 20 minutes until the cauliflower is tender.
- Puree the soup with an immersion blender until smooth.
- Stir in coconut milk and season with salt and pepper.
- Heat through and serve warm.
Notes
For variations, you can swap coconut milk for almond milk or use frozen cauliflower instead of fresh.
