Ingredients
- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- Salt to taste
- Cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, salt, and half of the spices.
- Spread cauliflower on a baking sheet and roast for 25 minutes until golden brown.
- In a large pan, heat olive oil over medium heat. Add onion and sauté until soft, approximately 5 minutes.
- Add garlic and ginger, cooking for an additional 2 minutes until fragrant.
- Stir in the remaining spices, then add the diced tomatoes and coconut milk, mixing well.
- Allow the mixture to simmer for 10 minutes to deepen the flavors.
- Add the roasted cauliflower to the sauce and stir to combine, ensuring each floret is well coated.
- Cook for an additional 5 minutes, allowing the flavors to meld beautifully.
- Garnish with fresh cilantro before serving.
Notes
For optimal flavor, use fresh garlic and ginger. Adjust the spice level according to your taste preferences.
