Ingredients
- 1 head of cauliflower
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 can black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 diced bell pepper
- Sliced avocado for serving
- Chopped cilantro for garnish
Instructions
- Grate or process the cauliflower into rice-sized pieces.
- Heat olive oil in a skillet over medium heat and sauté cauliflower rice with spices for 5-7 minutes until tender.
- Add black beans and corn to the skillet, mixing well to warm through.
- Fold in diced bell pepper once off the heat, mixing for added crunch.
