Description

Ingredients

  • 1 head of cauliflower
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 diced bell pepper
  • Sliced avocado for serving
  • Chopped cilantro for garnish


Instructions

  1. Grate or process the cauliflower into rice-sized pieces.
  2. Heat olive oil in a skillet over medium heat and sauté cauliflower rice with spices for 5-7 minutes until tender.
