Ingredients

  • 4 cups carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Toss in the diced onions and minced garlic, sauté until translucent, about 5 minutes.
  3. Add chopped carrots and grated ginger, cook for another 5 minutes.
  4. Pour in vegetable broth, bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes until carrots are tender.
  6. Blend the soup until smooth.
