Ingredients
- 4 cups carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Toss in the diced onions and minced garlic, sauté until translucent, about 5 minutes.
- Add chopped carrots and grated ginger, cook for another 5 minutes.
- Pour in vegetable broth, bring to a boil.
- Reduce heat and let it simmer for 20 minutes until carrots are tender.
- Blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot, optionally with crusty bread.
