Healthy and delicious Carrot Cake Energy Balls packed with natural ingredients, providing energy and nutrients.
Ingredients
- 1 cup medjool dates (pits removed)
- 1/3 cup shredded carrots
- 1 cup walnuts
- 1 tbsp chia seeds
- 1/3 cup shredded unsweetened coconut
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 1 tsp vanilla extract
- Extra 1/2 cup shredded coconut for rolling
Instructions
- Add all the ingredients to a food processor and pulse until combined.
- Scoop out some dough using a spoon and roll it into balls.
- Roll each ball in the shredded coconut to coat.
- Place them in the fridge to firm up for at least one hour.
Notes
For a sweeter taste, make sure to use ripe medjool dates. Adjust the spices to your liking by adding more cinnamon or nutmeg.
