Description

Healthy and delicious Carrot Cake Energy Balls packed with natural ingredients, providing energy and nutrients.


Ingredients

  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • Extra 1/2 cup shredded coconut for rolling


Instructions

  1. Add all the ingredients to a food processor and pulse until combined.
  2. Scoop out some dough using a spoon and roll it into balls.
  3. Roll each ball in the shredded coconut to coat.
  4. Place them in the fridge to firm up for at least one hour.

Notes

For a sweeter taste, make sure to use ripe medjool dates. Adjust the spices to your liking by adding more cinnamon or nutmeg.
