Ingredients
- 2 cups shredded carrots
- 1 cup grated apple (granny smith or honeycrisp)
- 1/4 cup raisins
- 1/4 cup chopped walnuts (or pecans)
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded carrots and grated apple.
- Add the raisins and chopped walnuts.
- In a small bowl, mix the mayonnaise and apple cider vinegar.
- Pour the dressing over the carrot and apple mixture.
- Toss well to coat.
- Season with salt and pepper.
- Chill in the refrigerator for 30 minutes before serving.
Notes
For a healthier version, substitute mayonnaise with Greek yogurt. You can also add spices like cinnamon for extra flavor.
