Description

A spicy and creamy Cajun White Chicken Chili that’s easy to make and perfect for a cozy night in.


Ingredients

  • 1 lb chicken breast, diced
  • 1 can white beans, drained
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until soft.
  3. Add diced chicken and cook until browned.
  4. Stir in Cajun seasoning, cumin, salt, and pepper.
  5. Add white beans, corn, and chicken broth.
  6. Bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Serve hot with your choice of toppings.
