Ingredients
- 1 lb smoked sausage
- 1 cup rice
- 1 cup bell peppers, diced
- 2 tbsp Cajun seasoning
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
Instructions
- Heat some oil in a large skillet over medium heat.
- Add sliced smoked sausage and cook until browned.
- Add chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the diced bell peppers and cook for another few minutes.
- Add the rice and Cajun seasoning, mixing well.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer until the rice is cooked and has absorbed the liquid, about 20 minutes.
- Fluff with a fork and serve hot.
Notes
For extra heat, consider adding diced jalapeños or a few dashes of hot sauce. Fluff the rice with a fork before serving.
