Ingredients
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 8 ounces chicken sausage, sliced
- 1 can diced tomatoes, drained
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add diced onion, bell pepper, and minced garlic; sauté until softened.
- Stir in the sliced chicken sausage; cook until browned.
- Add uncooked long-grain rice; stir to coat.
- Pour in chicken broth and add Cajun seasoning; bring to a boil then reduce heat to low.
- Cover and simmer for about 20 minutes or until rice is tender.
- Stir in drained diced tomatoes; season with salt and pepper before serving hot.
