  • For the Lemon-Garlic Aioli:
  • ½ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and thoroughly dry the okra to prevent sogginess.
  3. Slice the okra in half lengthwise. Toss with olive oil, Cajun seasoning, garlic powder, salt, and pepper until evenly coated.
  4. Arrange the okra in a single layer on a parchment-lined baking sheet. Do not overcrowd.
  5. Roast for 18–22 minutes, flipping halfway through, until crispy and golden brown.
  6. Make the Aioli: In a small bowl, mix mayonnaise, lemon juice, minced garlic, and sea salt. Whisk until smooth. Adjust lemon or garlic to taste. Refrigerate until serving.

Notes

For a vegan option, use vegan mayonnaise. Serve fries immediately for best texture. Pairs well with grilled meats or as a game-day snack.
