- For the Okra Fries:
- 1 pound fresh okra, trimmed and halved lengthwise
- 1 tablespoon olive oil
- 2 teaspoons Cajun seasoning
- ½ teaspoon garlic powder
- Salt and pepper to taste
- For the Lemon-Garlic Aioli:
- ½ cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 garlic clove, minced
- Pinch of sea salt
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and thoroughly dry the okra to prevent sogginess.
- Slice the okra in half lengthwise. Toss with olive oil, Cajun seasoning, garlic powder, salt, and pepper until evenly coated.
- Arrange the okra in a single layer on a parchment-lined baking sheet. Do not overcrowd.
- Roast for 18–22 minutes, flipping halfway through, until crispy and golden brown.
- Make the Aioli: In a small bowl, mix mayonnaise, lemon juice, minced garlic, and sea salt. Whisk until smooth. Adjust lemon or garlic to taste. Refrigerate until serving.
Notes
For a vegan option, use vegan mayonnaise. Serve fries immediately for best texture. Pairs well with grilled meats or as a game-day snack.
