Description

Ingredients

  • 8 oz penne pasta
  • 1 lb chicken breast, sliced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil and cook the penne until al dente. Drain and set aside.
  2. Pat the chicken slices dry and coat with Cajun seasoning.
  3. Heat olive oil in a pan over medium heat and add the seasoned chicken. Cook until browned and cooked through. Remove and keep warm.
  4. Add sliced bell pepper to the same pan and sauté until slightly softened.
  5. Pour in the heavy cream and simmer. Stir in Parmesan until melted.
  6. Add cooked pasta and mix well to coat.
  7. Return chicken to the pan, toss everything together, and season with salt and pepper.
  8. Serve hot and garnish with extra Parmesan or fresh herbs if desired.
