Ingredients
- 8 oz penne pasta
- 1 lb chicken breast, sliced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 bell pepper, sliced
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the penne until al dente. Drain and set aside.
- Pat the chicken slices dry and coat with Cajun seasoning.
- Heat olive oil in a pan over medium heat and add the seasoned chicken. Cook until browned and cooked through. Remove and keep warm.
- Add sliced bell pepper to the same pan and sauté until slightly softened.
- Pour in the heavy cream and simmer. Stir in Parmesan until melted.
- Add cooked pasta and mix well to coat.
- Return chicken to the pan, toss everything together, and season with salt and pepper.
- Serve hot and garnish with extra Parmesan or fresh herbs if desired.
