Ingredients
- 1 lb chicken breasts
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chicken breasts, seasoning with salt, pepper, and Cajun seasoning. Cook until browned and thoroughly cooked through, then remove from the pot and set aside.
- In the same pot, toss in the diced bell pepper, chopped onion, and minced garlic. Sauté until softened and fragrant.
- Stir in the orzo pasta along with the chicken broth. Bring to a boil, reduce heat, and let it simmer for about 8–10 minutes, or until the orzo is al dente.
- Gently stir in the heavy cream and return the cooked chicken to the pot. Cook until heated through and creamy.
- Garnish with fresh parsley before serving.
Notes
Add hot sauce or crushed red pepper flakes for an extra kick. You can also use chicken thighs for a juicier option or substitute orzo with rice for a different texture.
