Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Olive oil
  • Chopped parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and bell pepper, and sauté until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add the chicken breasts and cook until browned on all sides.
  5. Stir in the orzo, diced tomatoes, chicken broth, heavy cream, and Cajun seasoning.
