Ingredients
- 2 chicken breasts
- 1 cup orzo pasta
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Olive oil
- Chopped parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion and bell pepper, and sauté until softened.
- Stir in the garlic and cook for another minute.
- Add the chicken breasts and cook until browned on all sides.
- Stir in the orzo, diced tomatoes, chicken broth, heavy cream, and Cajun seasoning.
- Bring to a simmer, cover, and cook for about 15-20 minutes, until orzo is tender and chicken is cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped parsley before serving.
